It's not delivery: Freeze your own pizzas

I love pizza.
My kids love pizza.
If you have kids, they probably love pizza, even if you don't.

If I had my "druthers," I'd choose someone cooking for me. But, I don't have a maid and a personal chef yet. Pizza Hut, Domino's, Little Caesar's, or the local pizzeria is great, but who can afford to eat out or have delivery all the time?

Not me, that's for sure. Besides, theirs are too greasy for my taste.

So, the next option is storebought. Digiorno, Freschetta, Red Baron, etc. They're good, but even they can get pricey - especially if you've got boys to feed like I do. Left alone, they could eat a whole pizza apiece.

That adds up after a while!

Here is how you can freeze your own rising-crust pizzas.

What you'll need:
Gallon size freezer bags (like Ziploc)
10 inch cardboard circles (look in the cake decorating supplies or cut your own)
Wax paper and tape
Plastic wrap

2 1/4 tsp. dry active yeast
2 Tbsp. sugar
1 1/2 c. warm (110 degrees) water
3 1/2 c. all-purpose flour
1/2 c. bread flour
2 Tbsp. italian seasoning (or a mix of basil, oregano, rosemary... whatever you have) - optional
3 Tbsp. olive oil or cooking oil

Dissolve yeast and sugar in warm water and let set for 5-10 minutes or until the mixture starts to foam.

Mix flours and seasoning together. Stir in yeast/water until it makes a dough ball. Coat with oil. Cover with plastic wrap and let set in a warm place to rise until the dough doubles in size - about 1 hour.

Punch dough down.

Dump dough out onto a floured surface and roll dough in flour to coat. Divide dough into three equal balls and coat each ball with oil.

Cover dough balls with plastic wrap and let rise until doubled in size - about 45 minutes.

Cover 3 cardboard circles with wax paper.

Place a dough ball on a covered cardboard circle and press out into a pizza crust.

Place crust in the freezer until just frozen. Remove from freezer and place in freezer bag, then return to freezer.

* You can freeze the crusts plain, or you can put your favorite toppings on them before freezing.

To bake:
Preheat oven to 450 degrees. Bake for 10 minutes at 450, then lower temp to 400 degrees and bake for 10 more minutes.

Cost (with toppings): less than $1 per pizza.

It's great to meet another Southern girl!! :) I've been reading your posts about canning and you are so smart to do all that!! I love to can and make my own jellies (I've got to start on pears soon ~ my trees are overflowing!) You've got some great recipes there that I'll have to try!!

We make homemade pizzas all the time, but haven't frozen any...great idea!
